EPISODE 37 - CRAB

CRAB NAPOLEONS

6 large tomatoes, stems removed
2 lb crabmeat, picked over
½ cup of sour cream or mayonnaise
1 celery stalk, diced
¼ cup red pepper diced
¼ yellow pepper diced
¼ cup fresh coriander, chopped
¼ fresh chives, chopped
½ tsp paprika
Juice of 1 lemon
Salt and pepper to taste

Combine all of the ingredients (except the tomatoes) in a large mixing bowl. Cover with plastic wrap and let 30 minutes

Slice each tomato horizontally into thirds or quarters depending on size.

Place the bottom of each tomato on a separate serving plates and spoon some of the crab mix on top.

Place the next tomato section on top of the crab mix and then spoon on more crab.

Repeat again till you complete the napoleon stack.

Drizzle with good quality balsamic vinegar and serve immediately.
