Episode 36: Pastry
PASTRY
1 cup of cold unsalted butter, cubed
2 2/3 cups all-purpose flour
¼ cup sugar
1/3 teaspoon salt
2 large egg yolks
3 tablespoons ice water
Add the flour, sugar, salt and butter to a food processor and pulse till you get a mixture that looks like coarse meal (of course I’ve never seen coarse meal before, so just pulse for a while till it gets to look okay, you’ll know what to do)
Whisk the egg yolks and ice water together in a small bowl and add to the food processor. Pulse again till everything is nicely incorporated.
Remove the dough from the processor with your hands or a spatchula and roll into a nice ball.
Wrap in plastic wrap and chill for at leastn 1 hour.
Makes enough dough for 1 regular pie.
