Episode 11 Perogies
Grilled Tequila Oysters
1 cup Unsalted butter
¼ cup Gold tequila
2 tbsp Fresh lime juice
2 tbsp Grated lime peel
36 Oysters, preferably "choice" size
Set your oven on grill.
Melt the butter in a medium sauce pan over a medium high heat and add the tequila, lime juice and lime peel. Bring to a gentle simmer and reduce heat. Let cook for 5 minutes.
Place the oysters in one layer on a baking sheet (you might have to do these in batches depending on your oven size).
Grill on the uppermost rack for about 7 minutes, or until the shells open.
Remove half the shell, discarding any oysters that didn't open.
Plate the oysters on serving dishes and drizzle with the tequila-lime butter.
Serve immediately with baguette Serves 6 as an appetizer.
