Episode 52 Carpaccio
Carpaccio 50 milliliters chopped shallot 50 milliliters apple cider vinegar 100 milliltres olive oil 15 milliliters chopped chives 15 mililitres chopped fenel Salt and pepper Garnish 1 apple in thin julienne 1 fenel in thin julienne Preparation time is 10 minutes Ease of preparation is easy Mix the garnish with a bit of the vinaigrette. Put the vinaigrette on the duck. For plating, put the duck slices on a plate, add a bit of the garnish and a slice of cold foie gras pate. Salad Fresh baby salad and greens For the dressing 50 milliliters chopped shallot 50 milliliters rice vinegar 100 milliliters olive oil 50 milliliters roasted mustard seeds 50 milliliters maple syrup Salt and pepper Mix all ingredients together. Prep of the duck 4 pounds duck 100 milliliters maple brandy 300 milliliters maple syrup Salt and pepper 1 onion chopped in 2 50 milliliters maple syrup 100 milliliters duck stock Flambé the duck with the brandy add a bit of maple syrup and put the duck in a 375 degree Fahrenheit oven for 1 hour. Put a little bit more of maple syrup every 10 minutes until golden brown. Roast the onion with a bit of butter and the maple syrup, add the duck stock and put in a 375 degree Fahrenheit oven for 15 minutes. Confit leg 500 milliliters duck fat Legs of the duck Put the legs in the fat at 200 degrees Fahrenheit for about 3 hours. For the sauce 175 milliliters chopped shallot 100 milliliters maple syrup 500 milliliters duck stock Salt and pepper For the cake 175 milliliters duck fat or butter 250 grams sugar 3 eggs 6 egg yolks 150 grams flour 125 grams corn meal 1 teaspoon baking powder Cream the fat with the sugar, add he eggs and egg yolks one at a time. Add the dry ingredients to the batters For the Ice Cream 666 milliliters cream 333 milliliters milk 150 grams sugar Bring to a boil and let cool 100 grams nuts 200 grams sugar 100 milliliters water 100 milliliters maple brandy Make a caramel with the sugar and water, add the nuts and flambé with the maple brandy and let cool. Put the ice cream prep and the caramelized nuts in an ice cream machine. For the apple 4 apples peeled and chopped in12 parts 100 grams sugar 100 grams butter Caramelize the apple with the butter and sugar. Put 4 pieces of apple in 8 centimeter diameter ring molds, add the cake mixture and cook in a 375 degree Fahrenheit oven for 20 minutes.
