Episode 59: Tailgate
1 tablespoon salt ¼ cup sugar 2 tablespoons brown sugar 2 tablespoons cumin 2 tablespoons chilli powder (Mexican, chimayo mild, ancho or some other chilli powder, not supermarket brand) 1 tablespoon ground black pepper 1 tablespoon cayenne ¼ cup paprika 1 teaspoon ground pepper 1 teaspoon dried ginger 1 teaspoon dried sage 1 teaspoon oregano 1 teaspoon allspice ½ teaspoon ground cloves 1 cup ball park mustard Preparation time is 15 minutes. Ease of preparation is easy. Yield: enough to cover a 6 pound brisket 1 small finely chopped onion 1 tablespoon canola oil 2 pounds lean ground beef (extra lean ground beef will make a very dry hamburger) 2 eggs ½ cup to 1 cup bread crumbs 1 tablespoon salt 1 teaspoon fresh ground pepper Preparation time is 15 minutes. Ease of preparation is easy. Sauté onion in canola oil until just done and chill. Mix all of the above ingredients, adding bread crumbs gradually until you have a mixture that will hold together, without being too dry. Scoop patties by using a ladle as a measure (4 ounces to 6 ounces). When forming the patty make sure that the centre of the patty is shallow and the outside is thicker. Since patties will shrink during barbequing this will ensure that the patty remains even once cooked. Barbecue over medium to high heat for 5 to 7 minutes each side. Serve on buttered toasted buns with your favourite topping. Yield: (6) 6-ounce patties or (9) 4-ounce patties Add to basic hamburger recipe 2 cloves minced garlic 1 tablespoon olive oil 4 ounces coarsely chopped black olives 4 ounces diced sun dried tomatoes 1 teaspoon oregano mozzarella cheese for topping Preparation time is 15 minutes. Ease of preparation is easy. Sauté the garlic in some olive oil for 2 to 3 minutes. Add the black olives, sun dried tomatoes and oregano and sauté for 3 to 5 minutes longer. Chill and mix in with basic hamburger recipe. Barbecue patties for 7 minutes each side. Top with mozzarella cheese and garnish with your favourite toppings. For added zest, spread some soft goats cheese on each side of the buns and toast buns spread side up on barbecue prior to serving. Yield: (6) 6-ounce patties or (9) 4-ounce patties Add to the Basic hamburger recipe ½ cup sugar 1 medium sized onion finely diced 4 ounces stilton cheese 1 tablespoon grainy mustard 1 tablespoon mayonnaise Preparation time is 15 minutes. Ease of preparation is easy. In a saucepan, melt sugar until light brown. Do not leave sugar unattended on stove, it will burn very quickly. Using wooden spoon stir sugar until completely dissolved and caramelized. Add the diced onions and bring to boil. Crumble stilton and mix with mustard and mayonnaise. Barbecue patties from basic recipe for approximately 7 minutes each side. Spread some candied onions on each side of sliced hamburger buns. Top hamburger with a teaspoon full of stilton mixture and garnish with your favourite toppings. Yield: (6) 6-ounce patties or (9) 4-ounce patties.THE GREAT CANADIAN FOOD SHOW
